Amsterdam!
De Kas is amazing. The team is so good, I already love them. Kyle and I have been treating the town of Amsterdam like and amusement park. My first day I started at 10’o clock nervous as hell trying to keep my breakfast down. All the while convincing myself, “confidence is key, keep your head up and they’ll treat you like a chef,” the advice Kyle gave me before we walked through the doors.
Everyone was out back on the garden terrace chain smoking and drinking espresso. I wore my wolf shirt, my black skinny jeans and my fringy ankle boot moccasins. Everyone was cool and nice. The chef looked at me with warm eyes and asked me what my plan was for the day, did I think about how I wanted to spend my first day at De Kas. I was embarrassed that I didn’t have a prepared answer, because in the interveiw he told me that I would be largely in charge of what I was doing there. I told him I was up for anything. He asked me to run the line for him at lunch…oh, p.s. they all speak dutch.
It was a crazy bill system, “ordering? 2 menu? gleen vlees, gleen vis, gleen aardappelmateriaal?

Wow, sounds,and looks like a great time. You are brave. I went to the Diamond today with Craig, Yvette and Bill. I had the special, some leaves with tasty salmon, cabbage and other things that I could not identify, but it was delicious. Also had the peanuts, grapefruit and avacado salad and the pork goyoza?? The girl who served us was Alexandrea and she says she misses you, and to say hi… HI!! Then we stopped at the Irish Heather for beer and food, my favorite thing was the Apricot Mousse..yum… Left Ben a msg but he has not returned my call.. will try again tomorrow.. Nice tomatoes by the way. I just picked about 5lbs this morning from my garden. The white eggplants are cute too. Magic Truffles? I don’t want to know. I guess that is why Kyle looks so blurry!
