Yeah Sure or Yes Sir

I went back the last few days resolved to stick it out. They told me to be always drinking sips of water to keep my palate fresh not just to stay hydrated, which I thought was kinda cool. I’m leaning better how to taste the very subtle parts of dishes. Everything is neat and clean. I learned why the carrots and hay dish has super soft carrots. When I had it I thought the carrots were over cooked but I didn’t want to say anything about it. Yesterday I asked and they said that it is a delicate dish with hay gele and little crunchy sprouts and if the carrots were al dente you would focus on that too much and they would stay in the mouth to long and the rest would be lost. That kinda blew my mind a little bit.

Kyle is on his 3rd day of a 3 day stage at One Market. We meet up after work at a tiki bar shit hole called the “Bamboo Hut”. It has been our meeting place this week because it has $2 Pabst and it is a block away from Coi. The first day of his stage he already made a friend and they were pretty drunk when I got off, the guy was a cook from One Market and he took us out and showed us around, it was fun. The restaurant scene here is small just like in Vancouver and I feel like with both of us hunting out restaurant info we have found out a lot about what’s what. We tried to figure out what restaurants to check out before we left but the internet is hard sometimes, but now we have a nice long list of places we would like to check out. I’m feeling a little trapped still because I want to check out so many places. I’ll have to live vicariously through Kyle.

Oh yeah and thank you for all of the comments, please keep the advice coming I need it.

    I have ALWAYS told the cooks that I work with to drink water rather than pop or coffee in order to keep their palates clear. But most cooks think that it is necessary to be on a sugar or caffeine or nicotine high in order to make it through working the long hours.

    I call bullshit. All of those things destroy your palate. Not only that, but they destroy your teeth as well. I have always worked without the aid of any of them.
