You know, fish prep is probably my favourite prep. How attacking flat fish & round fish differently eventually just becomes mechanical.
The scaling, the fileting, the portioning and even the eventual storing of it. It is a zen moment for me.

Yep – I remember learning rockfish from Keenliside – “stop just before the asshole” and what golden words of wisdom, because once I cut too far and ….
I always get the junior cooks to practice on ling cod and rockfish because they are cheap. These are great basic skills all chefs-to-be must have.
