Up until now I was always trying to obtain a book of solid recipes. But right now I’m obsessed with ratios. You can never remember all of the recipes but you can remember ratios. Like for sausage there should be 30% fat to 70% meat. The new pasta dough recipe I’m learning is 1 egg to every 100g flour. Today I tried to make waffles with no recipe and just ratios and it worked.

Your website is very interesting, especially your stories. Although seeing all your burns and hearing about you crying on your last days a Chow, really made me want to hug you and kiss your booboos! Love mum xoxo

You’re blog is the coolest thing I’ve ever seen. Real, honest cook stories. Great stuff, keep it up!

    Yes, ratios!

Michael Ruhlman, http://blog.ruhlman.com/, told me when he was last here, that his next project is a book about ratios. Right on track, girl.

Thank you for this site… I thought it was just me.
