Tonight at work we shucked 300 oysters. There were malpec, chef’s creek, and kushi. I ate a kushi oyster and I crunched on something and I was sad because I thought that we had missed a piece of shell, I pulled it out of my mouth and it was a tiny pearl. I couldn’t believe it! I was so stoked. I put it in a 250 ml and labeled it so I wouldn’t loose it.

Oysters are fucking amazing, they are natures canape. They have their own cool little beautiful cup made by nature. They are also the ultimate amuse, because they get you so excited to eat and they are so refreshing and briny. They go great with bubbles too, which is what I like to start a meal with.
