My All-Weather Notebook

This thing is my baby. It contains all my recipes that I’ve learned from the restaurnts that I’ve worked at. So many dough recipes, sausages, dressings, and ratios. Every cook should have a notebook, because you think you will remember, but you won’t. All the best cooks that I know have a book or many books that they write down tests and recipes, menus and parings. I have a yellow legal pad that I scratch out my tests on, I carry this book in my back pocket when I am online or at a stage. It is sweet because the pages are water proof so it is resistant to spills and ass sweat.

Been working at Boneta for 3 days, I am just so happy to be working there. It’s really that good. I’ve had to swallow my pride, I’m learning a lot. Scotty trained me so good before he left.

    I love how you take simple things from the everyday life of a cook, and give meaning to them. I also love things that resist ass sweat.

    You should see all the books (and menus) that I have with stuff written all over them. It’s nuts.

    Moi aussi, but lately I must admit I have taken to standardizing my recipes and putting them into Excel, which also resists ass sweat and is easier to cost.
