I got the Miso!

Food — Tags: , — By Crust on May 29, 2009

It’s not the barley miso, but it is the brown rice miso. I really like this miso!

Masa from Granville Island Sake helped me get one of the last buckets. I felt honored when I picked it up. This is a picture of it in the window of the walkin at The Diamond.

On an unrelated note, why is line caught rock cod that is a by-catch of halibut fishing $10.50/lb and dragnet rock cod is $6.75/lb? It’s a by-catch, so they aren’t even trying to catch it. Isn’t it the same fish? They also say that they only get the line caught one about 25% of the time. So even if I paid the price for that one I might not be able to get it consistently. Am I bad if I get the cheaper one? I feel like it is my duty to get the ocean wise one to stand behind my beliefs. Either way, my hands are tied.

Your hands are not tied. You can choose another fish.

Getting a fresh ocean-wise fish product consistently throughout the year is one of my great frustrations. Learn to be flexible now. (As in, try to find another product that holds up to your beliefs and change your dish around that. It is very hard, I know. We have very limited choices here. But necessity is the mother of invention.)

Good meeting you yesterday. Hope the Easter Egg radishes turned out all right. I was just reading your post. I toured this facility when I was with someone from Denman Island. If you think the miso is good. You should taste the Tamari. It is absolutely next level.

How do I contact you with info, price lists, etc.

  3. Matt R. says:

Fresh, ocean-wise, consisten, year round. Off the top of my head, make farmed trout and char (dolly varden) and Dungeness crab your friend.

    Anything else really?

  4. Colleen says:

    Mussels? Clams?

    Halibut until November or so.

The trick is not to fall in love with a dish that you have designed……a good lesson in itself……so that you are open to suggestions and other ideas.

Stand behind your beliefs. If you don’t you will feel like a fraud or hypocrite.

  5. Matt R. says:

Shell fish (farmed) is available year round, but I thought we were talking fin fish.

I haven’t really thought about it from that angle before (I guess it’s just been automatic) but are there any other fresh oceanwise fish year round? hmm…

Congratulations on the Diamond! Addicted to your gioza 🙂
