At Coi they make use of a lot of random things that their small suppliers have. One example is Yuba. They have a small local tofu supplier and when he makes the tofu and soy milk he gets Yuba as a by product. It is the skin that forms on the soymilk during production. He sells it to Coi and they cut it into noodles. Also in the yuba dish is some of the seaweed that comes with the abalone.
