Wolf Spider

Food — By Crust on June 13, 2009

Trav, sous from Boneta taught me how to do rock fish today. He’s had all kinds, canary, rough eye, yellow eye…

Spiders are all around me, even on my towels this morning, and in the tub.

Alright Crust are you a chef or a fucking zoo keeper!

You know, fish prep is probably my favourite prep. How attacking flat fish & round fish differently eventually just becomes mechanical.

The scaling, the fileting, the portioning and even the eventual storing of it. It is a zen moment for me.

    Hope you enjoyed it!

Yep – I remember learning rockfish from Keenliside – “stop just before the asshole” and what golden words of wisdom, because once I cut too far and ….

I always get the junior cooks to practice on ling cod and rockfish because they are cheap. These are great basic skills all chefs-to-be must have.

    Good for you!

Can hardly wait to see you… hope you got rid of those spiders! Jackie is here and went with Morgan to have birthday supper with Gr. Shirley.
