Up until now I was always trying to obtain a book of solid recipes. But right now I’m obsessed with ratios. You can never remember all of the recipes but you can remember ratios. Like for sausage there should be 30% fat to 70% meat. The new pasta dough recipe I’m learning is 1 egg to every 100g flour. Today I tried to make waffles with no recipe and just ratios and it worked.
